 Notes from the Winemaker

The busy seasons of Harvest and Holiday are behind us.  The winemaking team is busy topping and racking.  "Racking" is the process of moving the clear wine from the lees that settle to the bottom the barrel during the aging process.  Additionally each barrel is "topped" with new wine regularly to avoid contact with oxygen.

This is the time of the year when we taste and sample each barrel and carefully select and blend the ones that will become the 2007 Chambourcin.

  Chambourcin 2004

"Best Hybrid and Best Estate Wine" in NJ Wine Competition - 2008

Chambourcin is a late-ripening French Hybrid grape ideally suited for Eastern wine growing regions.  It produces a wine with intense purple color and spicy, herbal flavors.  Chambourcin's generous, full flavours of blackberry, nutmeg and herbs make it excellent for dishes that would traditionally be partnered by red wine: beef, lamb, and red-sauced pasta while its relatively low tannins makes it one of the few red varieties that can successfully be used as an accompaniment to seafood.

Chardonnay 2008

This wine is made from the green-skinned European vinifera grape. Four JG’s estate grown Chardonnay is a well balanced between acid, flavors, and body.  This Chardonnay is made from gently pressed estate grown ripe berries harvested on September 20, 2008.  Primary fermentation took place in chilled stainless steel.  Once fermentation and malolactic fermentation were completed, the clear wine is racked of the skins and seeds and placed into 60-gallon American oak barrels for about four months.  The wine is carefully monitored to ensure the right flavors are enhanced by oak aging.  This Chardonnay displays tropical flavor notes.  It drinks well with Caesar salad or simple preparations of fish.
